This Grilled zucchini pizza slices have been enormously popular on the blog, and they are perfect to make when you end up with gigantic zucchini in late summer, when it becomes difficult to keep up with the garden. This zucchini pizza recipe can repair the pizza descends, and pizza made from zucchini and garnished with pepperoni and cheese is delicious without having many carbohydrates.
The idea for grilled zucchini as a basis for low -carbohydrate zucchini pizza is one of those ideas that popped up in my head, and I am not sure if I was thinking about it. But this recipe was the happy result when I decided to combine the ideas behind grilled zucchini and my sister Val’s roasted zucchini with mozzarella and Pepperoni.
This is one of my recipes for extra large zucchini, and I cut slices of zucchini that were almost 4 centimeters over and about 3/4 inches thick. If you don’t have such a huge zucchini, use smaller zucchini sliced in length. And if Pepperoni is not your jam, use toppings that you prefer to the grilled zucchini pizza; I hope you like to try it!

Which other toppings can you use on zucchini pizza?
Everything you like on pizza can be cooked on a thick slice of grilled or roasted zucchini. I am a pepperoni girl, so of course I had to have that, but the topping options are endless here. Things such as mushrooms, peppers or sausage should be pre -cooked. You could use roasted red pepper, olives or Canadian bacon directly from the package.

How grilled zucchini pizza slices to make:

- I am a fan of Rao’s pizza sauce (affiliated link) That only has 3 carbohydrates in 1/4 cup, but use all sauce that contains little sugar. You only use one tablespoon of sauce on each zucchini slice. (I think Basil Pesto or a kind of white sauce also tastes great this.)
- I am a fan of making this with that overly large zucchini that appears in the fall. (I would not use huge zucchini that are usually seeds inside.) If you don’t have a large zucchini to make round slices, cut thick lengthwise lengthwise.
- Cut slices of zucchini that 3-4 inches and about 3/4 inches thick and brush both sides lightly with olive oil.
- Grill the zucchini slices on one side for about 7-8 minutes, or until there are a few grill traces and the zucchini starts to become soft. (If the slice has one side that is larger, grill that side first, so it is the top of the pizza.) If you don’t have a grill, this can certainly be cooked under the grill.
- I have planned 1 t pizza sauce on the top of each zucchini slice, but you may want a little bit more, depends on how big your slices of zucchini are.
- Then place other toppings on top of the sauce as desired. I have added a tablespoon of mozzarella cheese, about 4 slices of pepperoni and then a light sprinkle extra cheese. (You can see that there was no food stylist; sorry for the messy photo, but you get the idea.)
- Then place the covered pizzas back on the grill (or under the broilers) and cook 7-8 minutes more (or probably less time to roast.)
- Remove pizza from the grill and serve hot!
- This recipe is for eight zucchini pizza slices, and I am considering two slices like a portion.

Ingredients
8 large round zucchini slices, about 3-4 inches over and 3/4 inch thick (see nuts)
3 t olive oil
8 t rao’s pizza sauce
12 t grated mozzarella cheese
32 slices of Pepperoni (see comments)
Instructions
- Oil the grill grilles (I use a little oil on a paper towel) and then heat the grill for medium high.
- Cut a large zucchini into thick slices about 3/4 inch thick. (I use large zucchini in the late season that makes slices about 4 centimeters. If you don’t have zucchini that makes large round slices, you can cut the zucchini lengthwise. I would not use huge zucchini with large seeds for this recipe.)
- Grill the zucchini slices in total about 7 minutes, or until there are a few grill tracks at the bottom and it starts to get soft. (The second side is cooked after you have added the toppings.)
- If the zucchini has a side that is slightly larger, grill that first, so it will be the ‘top’.
- I would not bother to heat the sauce.
- Remove zucchini from the grill and put them grilled on a cutting board to bring them to the kitchen.
- Add about 1 tablespoon of sauce to each zucchini slice.
- Then replace with one tablespoon of mozzarella cheese.
- Put 4 slices of pepperoni (or other toppings as desired) over the cheese.
- Put a little more cheese over the pepperoni or other toppings.
- Return the charged zucchini slices to the grill and cook for about 7 minutes on the second side with the grill cover closed. (Check them every few minutes to see when the cheese has melted and the toppings are light brown.)
- Remove zucchini pizzas from the grill and serve hot.
- I have never had leftovers to heat again later, but if someone tries to heat this, I would like to hear how it works.
Notes
If you do not have an extra large zucchini to make slices, cut thick slices in the length.
You can use pizza toppings of your choice. I love Pepperoni, but you can also use fried mushrooms, Canadian bacon, boiled sausage, caramelized onions, cut olives, anchovies, fried peppers or other toppings that you like on pizza.
I thought about using grilled zucchini for a while as a basis for pizza, and this recipe was the happy result.
