Easy grilled Greek zucchini is a recipe that I have learned to make many years from a Greek friend. She taught me to brush zucchini with olive oil, to season with Greek herbs and the grill too grill for a simple zucchini. And luckily that Greek zucchini cooking lesson changed to this delicious and great side dish that is perfect for the Zucchette season. If you like Greek flavors and grilled zucchini, I promise that this can be your new favorite way to cook zucchini.
And the true sign of an absolute goalkeeper recipe in my house is that the morning after we had made the grilled Greek zucchini that you see here, I pulled the leftovers out of the fridge and ate them for breakfast! And the warmed zucchini with the somewhat more-melting feta cheese was perhaps even better than when it was made fresh! Make this recipe! I promise, you won’t regret it!

For this recipe we brushed the zucchini with olive oil, preferably Greek olive oil. We sprinkled the zucchini Greek herbs (affiliated link) Before we grill it. And when it was cooked, we arranged it on a plate and sprinkled with a generous amount of feta cheese.

How can you cook grilled Greek zucchini without an outdoor grill?
This recipe will of course be great cooked on an outdoor grill and you can view my message about how you can grill zucchini if you need tips for that. For this update we grilled the zucchini with a Hob grill pan (Affiliate link), which is a perfect option if you don’t have an outdoor grill. You can also cook zucchini on one George Foreman Grill (affiliated link), which boils it even faster because it boils both sides at the same time.

How to make easy grilled Greek zucchini:

- Wash zucchini, trim ends and cut small zucchini into four pieces in length and larger zucchini in six pieces in the length.
- If you have some larger zucchini with quite a few seeds, you can cut those seeds like the one in the front row of the photo.
- Brush zucchini with olive oil and sprinkle generously with Greek herbs. (affiliated link)
- Heat Hob grill pan (affiliated link) on medium high heat. (Of course you can cook the zucchini on an outdoor grill too!)
- Place zucchini crossing on the grill grilles with flat side down and cook for about 3 minutes.
- Turn the zucchini so that the other flat side is down and cook for about 3 minutes.
- Then turn the zucchini so that the side of the green skin is down and cook 3-4 minutes more, or until it is done with the desired tenderness.
- Place the Greek zucchini on a serving dish, sprinkle with feta cheese and enjoy it!

Instructions
- Wash zucchini, trim ends and cut each small zucchini into four pieces lengthwise and each larger zucchini in six pieces in the length.
- If you have larger zucchini with quite a few seeds, you can cut those seeds along the edge.
- Brush both sides of zucchini with olive oil and sprinkle generously with Greek herbs. (affiliated link)
- Heat Hob grill pan (Affiliate link) on medium -sized high heat, so it’s hot when you turn on the zucchini and you can get nice grill tracks.
- Place zucchini crossing on the grill grilles with flat side down and cook for about 3 minutes. (Lift the edge to see if you have grill tracks.)
- Turn the zucchini so that the other flat side is down and cook for about 3 minutes. (Check again for grill markings.)
- Then turn the zucchini so that the side of the green skin is down and cook 3-4 minutes more, or until it is done the desired tenderness when you pierce it with a fork.
- Place the Greek zucchini on a serving dish, sprinkle with feta cheese and enjoy it!
