Tuna salad with cucumbers, tomatoes, parsley and mint Is the kind of things I want for dinner at this time of the year! And it is true that when the end of the summer is approaching, I find it difficult to let go of summer food. And I don’t apologize for it, because these kinds of salads are perfect to make in late summer, when garden tomatoes are on their prime and the herb garden is still full with leafy goodness.
This salad is inspired by my favorite tomato salad in the middle, something that I make every year when I have good tomatoes, fresh cucumbers and parsley and mint from the garden. This salad with tuna has some of the same flavors, but it contains tomatoes and cucumbers that are cut into larger chunks, for more a main lank salad.
What this salad really makes a winner for me is the generous amount of chopped fresh parsley and mint. I have not been to the middle, but I ate in enough restaurants in the middle to know about their salads with fresh herbs, where the herbs are almost eaten as a form of vegetables. I used a whole cup of chopped parsley and chopped mint in this salad, for that great Middle Eastern taste combination that I love so much. Of course, if you don’t have a garden with fresh herbs or not so much a parsley and mint fan, you feel free to make the salad with fewer herbs.

How to make tuna salad with cucumbers, tomatoes, parsley and mint:

- Cut enough small tomatoes to make 2 cups of tomato pieces.
- Put the tomatoes in a colander in the sink and let part of the liquid run away.

- Chop 1 cup every fresh parsley and fresh mint.
- Cut enough green onions to make 1/2 cup, using white and green parts
- Beat olive oil, lemon juice and Spike -herbs To make the dressing. (affiliated link)
- Mix the tomatoes, cucumbers, green onions, chopped parsley and chopped mint and gently throw together with the dressing.
- Carefully fold the drained tuna and season with salt and fresh ground black pepper.
