In a bowl, combine ground beef, ground pork, almond flour, Parmesan cheese, egg, oregano, basil, garlic powder, onion powder, salt and pepper.
Mix well and roll small, bite-sized meatballs (use a ½ tablespoon measuring spoon to measure). Set aside until ready to use.
Heat olive oil in a Dutch oven or stockpot over medium heat. Add the onion and celery and fry for 3-4 minutes until soft. Stir in the garlic and cook for another 30 seconds.
Pour in the chicken stock, water, Italian seasoning, salt and pepper. Bring to the boil.
Add the meatballs and cook for 10-12 minutes until cooked through. Scrape all the fat and foam from the top.
Stir in the chopped spinach and cook for another 2 minutes.
To finish the soup, slowly drizzle in the beaten egg while stirring the soup, creating thin egg ribbons.
Let it boil for 1 minute and then remove it from the heat. Serve warm, topped with fresh Parmesan cheese!
