Low -carbohydrate breakfast bins (with broccoli, mushrooms, ham and cheddar) is a delicious breakfast to make at the weekend. I love this combination for breakfast and I recommend this recipe for my Friday favorites this week.

I love weekends when I’m at home and I have time to get caught up in things. And this weekend I think of weekend food, and I like to make something tasty and have leftovers to eat for a few days! I made that category on the blog because of my preference to cook ahead, a habit I received when I taught at school and had to plan ahead for lunches! In those days I didn’t want to eat school lunch and there was no time to go out!

Now that I am a blogger who works at home, I am not so good at cooking at the weekend, but it is something that I always try to improve! And nothing helps me to stay on course with my carbohydrate -conscious food, such as good food in the fridge that is ready to eat.

  9. Use a fork to stir carefully until all broccoli, mushrooms, ham and cheese are covered with egg. (It may seem like you need more egg, but believe me about this!)
  10. Bake for 40-45 minutes, or until the eggs are set and the top of the egg bin is somewhat brown.
  11. Serve hot, garnished with a blob of sour cream if desired.
  12. I would not freeze this, but you can bake it at the weekend and stay in the fridge for breakfast all week.
  13. Heat the low-carb breakfast bins in the microwave for only 1-2 minutes. Or heat a few minutes in a frying pan on the stove.
