🍓 Make the topping just before serving. It is a simple combination of a sugar -free glaze (I usually buy it At Walmart Or in a local supermarket) and fresh strawberries. You can simply use strawberries if you don’t want to use the glaze, but I think the glaze gives it that photo-perfect cheesecake look! You can also add some low carbohydrates Homemade whipped cream.

Crust instructions

  • Preheat the oven to 350 F.

  • Combine almond meal (or flour) and swear grainy, then add melted butter and combine thoroughly.

  • Spray the inside of a 9-inch spring-shaped cheesecake pan with cooking spray with anti-stick, then add the crust to the bottom and spread evenly.

  • Wrap the sides of the pan loosely (just up to the top edge) with a layer of heavy foil and bake for 8 minutes.

  • Remove the crust from the oven and then immediately fill an oven -safe frying pan or pot with approximately 1.5 centimeters of hot water. Place the pan on the lower rack of the oven and leave it there for the rest of the cheesecake process. This serves as a replacement for a traditional water bath (see comments for more information).

  • Turn the oven to 325 F and continue to the filling.

Filling instructions

  • Add to a mixing bowl cream cheese, sour cream, swear brown, swing grainy and salt. Use a hand or standard mixer, mix on low and combine thoroughly. (Be careful not to mix – it must stay closed for a good baking and final texture.)

  • Scrape along the sides and then add lemon juice, vanilla extract, almond flour and one egg. Mix on layer to combine, scrape along the sides again and add the second egg, mix and scrape the sides. Repeat the process with the final egg, and, if desired, fold chopped strawberries.

  • After the crust has cooled to room temperature, pour the cheesecake mixture into the spring form and level it with a spatula.

  • Place the cheesecake on the middle rack of the oven, directly above the pan with water, and bake for 60 minutes at 325 F.

  • After 60 minutes, turn the oven out, open the oven door with a wooden spoon and keep cheesecake in the oven for 60 minutes.

  • After 60 minutes, remove the cheesecake and let it cool to room temperature.

  • After the cheesecake has cooled, cool it for at least six hours (preferably at night).

  • Follow the topping instructions at least 30 minutes before serving to make the strawberry sauce.

  • When you are ready to serve, use a hot knife to cut slices neatly.

  • Serve, garnished with sauce. Enjoy!

  • I have not added any strawberries cut into cubes to the cheesecake shown here, but sometimes I do. Do what appeals to you the most.
  • Strawberry Glaze is often found in the products or baking section and I have discovered that most brands have a sugar-free version. If you prefer to omit this, you can surpass your cheesecake with fresh strawberries instead.
  • I go with a steam pan instead of a water bath. In my opinion it is just a bit easier and I have seen no difference in the results. But if you like to use a steam bath, you feel free!
