Beat almond flour, whey protein powder, low-carbohydrate sweetener, baking powder, salt and xanthan gum.

Add sour cream, melted butter and the hot water to the almond flour mixture.

Stir and stir with a fork until a dough forms.

Divide the dough into 14 equal pieces and roll each piece into a ball with your hands.

Set aside.

Add avocado oil to a small anti-stick frying pan and heat over low to medium heat. Add enough oil to cover the donut hole almost halfway (about ½ inch deep).

As soon as the oil is hot, add about three of the donut holes at the same time and bake on each side until golden brown, using a spoon or spatula to carefully turn the donut holes into the oil.

Remove the donut holes from the oil with a slutel as soon as they are brown on all sides.

Place them on a plate -lined plate. Repeat this until all donut holes are cooked.

Add the glaze ingredients in a small mixing bowl. Mix until the ingredients are well combined.

Add each donut hole to the glaze and roll around to cover in the glaze.

Remove and place on a clean plate. Repeat this until all donut holes are glazed.
Let the donut holes cool and let the glaze dry.
Tips: Make sure you have an unsweetened, not -aromatized whey Protein powder, because other protein powders can melt or fall apart during frying. I used avocado oil for frying the donut holes because it has a high smoking point. Other oils can burn, so make sure the oil you use has a high smoking point.
Tips
The keto-donut holes may retain their round shape while turning and frying, but that is fine (mine ended in cube-shaped).
Variations
- Sweetener Donut holes – Instead of making the donut glaze, you could roll the keto donut holes in a low-carbohydrate sweetener in powder form.
- Cinnamon Donut hole – You can skip the glaze and roll the donut hole in a mixture of low -carbohydrate sweetener and cinnamon.
Equipment
