Flaxseed cookies made from almond flour are a delicious sugar and gluten free cookie that reminded us a bit of Snickerdoodles! The linseed cookies have a slightly more complex taste due to the combination of almond flour and linseed flour.
If you’re unsure about cookies with flaxseed meal, don’t worry about it, because the cookies only use a few tablespoons of it, and healthy flaxseed meal has a nice slightly nutty flavor! And these delicious sugar-free cookies are also gluten-free. And for many people, cookie baking season is about to begin, so I hope you enjoy making some!

Why did we add flaxseed to these cookies?
Flaxseed is a fun ingredient that can be used as a thickener in low-carb cooking, and it’s also a great ingredient to add healthy fat, fiber, and antioxidants. In reality, Flaxseed is widely recognized as highly nutritiousand they also have a pleasant, slightly nutty taste.
Which type of Monkfruit Sweeter should you use?
You can certainly use Golden Monkfruit Sweetener or Monkfruit Sweetener for these cookies, but I realize that for recipes like these without a lot of liquid, the classic (white) Monkfruit Sweetener dissolves a little better.

How to make flaxseed cookies from almond flour:

- Preheat the oven to 300F/150C and line a large baking tray with baking paper.
- I used mine KitchenAid stand mixer (affiliate link) and this dough is quite stiff so I would definitely use a stand mixer if you have one.
- Mix the softened butter and Monkfruit sweetener.
- Add the salt and vanilla and mix for a few more seconds.
- Then add the flaxseed meal and almond flour and beat until the mixture comes together.
- Combine some Golden Monkfruit sweetener with a little ground cinnamon. Pour this mixture onto a plate.
- Use a measuring spoon to scoop out the dough, roll each piece in the Golden Monkfruit/Cinnamon mixture and place the cookies in rows on the baking paper.
- Use a fork to break up the cookies.
- Bake for about 30 minutes, or until the cookies are just starting to brown and are barely firm to the touch.
- Let the cookies cool on the baking sheet for about 20 minutes; they become firmer as they cool.
- These flaxseed cookies freeze well; I took one out of the freezer in the morning to eat with coffee!
