This recipe for baked potatoes with chicken and broccoli is a nutritionally balanced and hearty lunch that impresses with its high protein content and very simple preparation. We need:

  • 1 kg of potatoes
  • 500 grams of broccoli
  • 400 g chicken fillets
  • 150 ml semi-skimmed milk
  • 140 g Greek yoghurt 0% fat
  • 100 g hard cheese
  • 3 teaspoon salt
  • 2 eggs
  • 1 tablespoon of olive oil
  • ½ teaspoon ground pepper
  • handful of chives

Instructions:

We start by preparing the potatoes. Peel them and cut them into thin slices. Cut the broccoli in florets and the chicken cubed breasts. Put everything in an oven dish, season with salt, pepper and mix thoroughly. Beat the eggs with Greek yogurt, milk, oil and finely chopped chives. Pour this mixture over the potatoes and sprinkle with it coarsely grated cheese.

Baking for 50 minutes at 180°C until golden brown. Then serve with kimchi.
