And recently I remembered this yummy eggless breakfast and started making it regularly again. So I thought I’d list it as my pick for Friday Favorites for this week, to remind anyone who may have forgotten! For years people wrote to me asking for a low-carb breakfast without eggs! Finally I had the idea for this tasty egg-free breakfast that is perfect for people who don’t like eggs or can’t eat them. Now this recipe has been popular on the website for years.

How to make a sausage and peppers breakfast without eggs:

  1. Cut a red pepper and a green pepper into pieces of about 2.5 cm in diameter. (You can use any color pepper.)
  2. Place the peppers in a sprayed baking dish, sprinkle with a little olive oil, Spike herbs (affiliate link), and black pepper and start roasting in a hot oven.
  3. Heat a little oil in a non-stick pan and fry the sausages until nicely browned on all sides for about 10-12 minutes.
  4. When the sausage is nicely browned, cut each piece into thirds so that you have bite-sized pieces of sausage.
  5. After the peppers have roasted for 20 minutes, add the sausage to the bowl and cook for another 5 minutes. (Or longer if you don’t like a little crunchy pepper, like me.)
  6. While the sausage is browning, measure out 1/2 cup of mozzarella (or more).
  7. Set the oven to BROIL and sprinkle mozzarella over the sausage-pepper mixture.
  8. Broil until the cheese is completely melted and starting to brown, about 2 minutes for my grill. (Pay close attention, especially if your grill is quite hot.)
  9. Serve the Breakfast with Sausage and Peppers Without Egg hot and enjoy!
  10. I divided my leftovers into serving bowls and it heated up nicely in the microwave.

This eggless breakfast recipe with sausage and peppers has been added to the Weekend Food Prep category, where you’ll find recipes that you can prepare or cook on the weekend and eat during the week!

Ingredients

  • 1 large green pepper, chopped

  • 1 large red pepper, finely chopped (or use another color pepper of your choice)

  • 1 1/2 tsp. olive oil

  • Spike Seasoning to taste (or use a universal spice blend that you like the taste of)

  • freshly ground black pepper to taste

  • 10 oz. pre-cooked turkey or pork breakfast sausages of your choice (see notes)

  • 1/2 cup grated mozzarella cheese

Instructions

  1. Preheat the oven to 450F/230C.
  2. Spray a medium baking dish with nonstick cooking spray.
  3. Cut away the stem part, remove the seeds from the red and green pepper and cut the pepper into pieces of about 2.5 cm in diameter.
  4. Place the peppers in the baking dish, mix with 1 teaspoon of olive oil and drizzle with Spike herbs (affiliate link) and freshly ground black pepper, and place the dish in the oven and bake for 20 minutes.
  5. While the peppers are cooking, heat the remaining olive oil in a non-stick pan, add the sausages and cook over medium heat until nicely browned on all sides, about 10-12 minutes.
  6. Place the sausage on the cutting board, line them up and cut the sausages into thirds.
  7. Once the peppers have cooked for 20 minutes, add the sausages and cook for a further 5 minutes.
  8. Remove from the oven, set the oven to BROIL, sprinkle the grated mozzarella over the sausage and pepper combination and return to the oven and broil for 1-2 minutes, or until the cheese is nicely melted and starting to brown.
  9. Serve the No-Egg Breakfast warm and enjoy!

Comments

I used pre-cooked turkey breakfast sausage when I originally made this. If you use uncooked turkey breakfast sausage, you will need to cook it a little longer.

For low-carb or Keto diets, use pork sausage, or whichever higher fat sausage you prefer. Be sure to look for gluten-free sausage if necessary.

This keeps well in the refrigerator, so don’t be afraid to double the recipe if you have a larger baking dish. I pack mine in individual refrigerator containers and reheat in the microwave for about 1-2 minutes the next morning.
