I can’t even call this a “recipe” – it’s just a shared dinner inspired by a breakfast my whole family loves! It’s versatile and can easily be customized depending on the bread you can find in the clearance cart in the back of your local Walmart! I’ve used bagels, ciabatta, rolls, and English muffins, and they all taste delicious!

Tonight I served the sandwiches with grapefruit and green beans, but here too the side dishes are endless. This entire meal, including the side dishes, is ready in less than 30 minutes, making this a standby dinner at our house.

The ingredients laid out on a wooden surface include a pack of bacon, six eggs, three grapefruits, two cans of chopped green beans, a stick of butter, a pack of sharp cheddar cheese slices and a bag of ciabatta rolls.

Ingredients for breakfast sandwiches:

  • 6 ciabatta rolls (or bagels, or other bread) (Walmart Discounted Cart – $1 for 1 bag of 12) — $0.50
  • 4 Tablespoons of butter (Aldi – $3.39 for 1 pound)–$0.42
  • 1 pack of bacon (Aldi – $4.49 for 1 pound)– $2.99
  • 6 oz sliced ​​cheese (Aldi – $1.49 for 8 oz.) — $1.12
  • 6 eggs (Aldi – $1.96 for 1 dozen) –$0.98
  • 3 grapefruits (Aldi – $3.99 for 5 pounds) — $1
  • 2 cans of green beans (Aldi – $0.50 for 1 can) –$1
  • salt and pepper to taste

Total for the entire dinner (for 6 people): $8.01

To make homemade breakfast sandwiches:

1. Fry the bacon in an electric frying pan until done. Place the cooked bacon on paper towels to drain the fat.

Several strips of bacon sizzle and partially cook on a well-used metal baking sheet.

2. In the same skillet, add the eggs and fry in the remaining bacon fat until cooked to your liking. Remove it from the frying pan and place it on kitchen paper.

Boiled fried eggs are placed on a paper towel to drain, seasoned with black pepper.

3. Cut the ciabatta in half and butter each half. Place them on a baking tray and roast them in the oven until lightly browned. As soon as you remove the rolls from the oven, place slices of cheese on half of the warm rolls (you can also add the cheese slices during the last minute of roasting).

Halved ciabatta rolls are placed cut side up on a baking sheet and each covered with a layer of butter.

4. Prepare the sides that you will serve with the rolls.
