Zucchini strata (with basil and cheese) is a tasty breakfast frying pan or meatless main course that can help you use some zucchini! And this recipe is perfect to make with the gigantic zucchini that appear in the garden, but regularly use zucchini if that is what you have!

Zucchini layers (with basil and cheese) is a beloved recipe with one of my favorite summer flavor combinations! And I contribute to the recipe with better photos, and I couldn’t resist the recipe to make a little more cheesy for the updated version. Of course use more or less cheese, whatever you want.

This recipe for zucchini with basil and a lot of cheese is a perfect way to use extra large zucchini if you are a gardener who has that problem, but of course you can also make it with the zucchini of the normal size from the supermarket! This is a recipe that I made when I had friends who were volunteering as a recipe testers, and it was a big hit with everyone who tried it.

And the zucchini layers is something I have enjoyed for years, and it is the perfect thing to make when you have zucchini and fresh basil! And personally I would eat this for breakfast, lunch or dinner! I hope you like to try it.

According to Wikipedia: “Strata is a family of layered roasting dishes in American cuisine. The most common modern variant is a brunch dish, made from a mixture that mainly consists of bread, eggs and cheese.” My low carbohydrate layers with zucchini, basil and cheese of course do not use bread, but it is still delicious!

Is this zucchini recipe a breakfast dish?

Zucchini strata (with basil and cheese) has eggs and is delicious for breakfast ban, but I also think that the combination of zucchini+basil+cheese makes this perfect as a zucchin dish or meatless main course at any time of the day.

Why is this a great recipe idea for extra large zucchini?

This recipe used to say “Monster Zucchini” in the title, and over the years I realized that people who have not grown zucchini themselves may wonder if Monster Zucchini is a new Zucchini variety! Of course everyone who has had a garden about that monster zucchini who hides themselves under the leaves, and this recipe was a great way to use them by cutting the zucchini in length strips, scrape off the seeds and then cut the long pieces into short slices. If you use that method, you can get away with making this with a really huge zucchini.

How to make zucchini layers (with basil and cheese):

  1. Whether you use one gigantic zucchini or different average size, the process of preparing it is usually the same.
  2. If you have a monster zucchini, start by cutting the zucchini by half to get two manageable pieces. (You can skip this step for smaller zucchini.)
  3. Then cut the ends and cut each zucchini (or any half of the monster zucchini length in the fourth (or sixth for a monster zucchini if it is really huge.)
  4. Cut the seeds on each piece and leave about 3/8 inches of the white meat.
  5. Then cut the strips into slices.
  6. Heat the oil in a large frying pan over medium heat. Then add the zucchini and cook for 2-3 minutes.
  7. Add the Spike -herbs (Affiliate link) (or an all-purport herbs of your choice) and chopped basil and cook 2-3 minutes more.
  8. Season with salt and fresh black pepper to taste. (The zucchini hardly gets to be soft.)
  9. Spray a 9 ″ x 12 ″ oven dish with olive oil or anti-stick spray and then arrange the zucchini, mozzarella and Monterey Jack Cheese in a single layer. (Do not use a smaller dish; you want the zucchini to peek a little above the egg/cheese mixture.)
  10. Beat the eggs with the 1/2 cup of coarse grated Parmesan cheese.
  11. Pour eggs over the zucchini and sprinkle with the other 1/2 cup of coarse grated Parmesan cheese. (I can be picky, so I use a fork to get the zucchini evenly in the dish!)
  12. Bake for 30-35 minutes or until the mixture is properly adjusted and light brown on top.
  13. Serve the zucchini layers hot! This is great to make at the weekend and heat again during the week for breakfast, lunch or dinner.

Make it a low -carbohydrate meal:

The zucchini layers could certainly be a one -off meatless meal with few carbohydrates for breakfast, lunch or dinner, but if you wanted to add something, it would be good with one of these side dishes, perhaps depending on the time of the day you eat it!

Ingredients

  • 1 large zucchini, 14-16 inch long (see comments)

  • 2 t olive oil

  • 1-2 teaspoon. Spike -herbs

  • Salt and fresh black pepper to taste

  • 3/4 cup of chopped fresh basil (or more if you are a fan and have a lot of basil)

  • 1 cup of grated mozzarella -cheese

  • 1/2 cup of grated Monterey Jack Cheese

  • 10 eggs

  • 1/2 cup + 1/2 cup of coarse grated Parmesan cheese or asiago cheese (if you only have finely grated Parmesan cheese, I would use a little less)

Instructions

  1. Preheat the oven to 400F/200C.
  2. Use a 9 x 12 glass false dish and spray with olive oil or anti -bin spray for this
  3. Was zucchini, cut the ends (and if the sample zucchini is cut in half crosswise to get pieces to get manageable pieces.)
  4. Cut each zucchini or half of the sample zucchini lengthwise in the fourth (or sixth).
  5. Use a spoon or small knife to scrape the seeds and most of the white inside, so that about 3/8 inch white is attached to the skin.
  6. Then cut each strip of crosses about 3/8 inches wide.
  7. Heat olive oil in a large anti-stick frying pan, add zucchini and bake for 2-3 minutes over medium heat.
  8. Add Spike -herbs (affiliated link) and fresh basil and bake 2-3 minutes more.
  9. The zucchini season with salt and fresh ground black pepper. (Zucchini should hardly begin to mitigate when you switch off the heat.)
  10. Put the zucchini in the dish dish and cover with the mozzarella and Monterey Jack Cheese.
  11. Combine eggs and 1/2 cup of coarse grated Parmesan cheese or asiago and beat well.
  12. Pour the egg mixture over zucchini and cheese and stir carefully so that it is well combined, with some zucchini pieces “peek” out of the egg.
  13. Sprinkle the other 1/2 cup of Parmesan cheese or Asiago over the top.
  14. Bake for 3o-35 minutes, or until the mixture is set properly and is somewhat brown.
  15. Serve the zucchini layers, with a little sour cream if desired.

Notes

If you use small or medium -sized zucchini, you need about 6 cups of cut zucchini strips.

This updated version with more cheese is perhaps a bit high in fat for the original South Beach diet, which would recommend lean cheese, but use less cheese if you prefer.
