Prepare bread: Place 4 slices of sourdough or other hearty bread on a cutting board. Spread 2 Tablespoons of butter on one side of each slice. Turn the bread over and spread it 3 tablespoons mayonnaise on the other side (the mayo sides form the inside of the rolls).
Assembling sandwiches: Place 2 slices of bread on a cutting board, butter side down. Distribution 4 slices of Swiss cheese, 8 ounces deli turkey slices, 4 slices of baconAnd 1 medium tomato (sliced) evenly between the 2 slices of bread. Add 4 slices of provolone cheesedivide among the sandwiches and finish with the remaining slices of bread, butter side facing out.
Cooking sandwiches: Heat a large frying pan over medium heat. Add the sandwiches and cook for 3-4 minutes per side, until the bread is golden brown and the cheese is melted. Reduce the heat of the hob if the bread is browning too quickly.
Serve: Remove the sandwiches from the frying pan, cut each in half and serve warm.
Fridge storage: Store in an airtight container in the refrigerator for up to 2 days. Reheat in a frying pan or toaster oven to get the bread crispy again.
