This tasty Taco meat from the slow cooker that is prepared unattended without browning the meat beforehand is an idea I loved from the moment I saw it. When I was teaching school, I would have Taco Salad for lunch several times a week. Now, I’m still a huge fan of taco salads, even though I have more lunch options. And for years, I’ve loved this method of preparing ground beef for tacos or taco salad, and this ground beef taco seasoning is something you’ll always find in my freezer!

This recipe is also perfect if you want to make tacos for a large crowd. Make a batch of taco meat for perfect game food! Then keep the meat warm in the slow cooker and let everyone assemble their tacos with the ingredients they prefer.

If you don’t want to use a slow cooker, I’m also a big fan of taco meat made in the Instant Pot. That’s another option to make easy and perfect taco meat. Whichever method you prefer, I hope you try my recipe and make tacos soon!

Why this recipe works for perfect Taco Meat:

I love the ground beef tacos you get at Mexican restaurants, where the meat is highly seasoned and falls apart very finely. That texture is what I’m going for with this recipe. I let the meat cook on high for almost four hours to get the broken texture I love so much, mashing with an old fashioned Potato masher about once an hour.

What hot sauce do I prefer to make Taco Meat in the CrockPot?

I used a generous amount of it Cholula Hot Sauce (affiliate link) to season the taco meat. (I love this low-carb hot sauce and buy the large bottle at Costco!) If you’re making this for kids (or adults who don’t like a lot of heat), use the smaller amount listed in the recipe notes.

How to make Slow Cooker Taco Meat:

  1. Some people start with frozen ground beef, but that idea didn’t appeal to me, so I thawed the meat in the refrigerator overnight.
  2. Place 3 pounds of lean ground beef in the slow cooker and break it apart with your hands. I use the photos of the Ninja Cooker that my friend Lydia sent me. You can use anything 5-quart slow cooker (affiliate link), or slightly smaller.
  3. Mix Cholula Hot Sauce (or other hot sauce of your choice), ground cumin, garlic powder, onion powder, black pepper, salt and water.
  4. Pour the spicy mixture over the minced meat. Then use a large spoon to stir the spice mixture into the minced meat and start cooking on high.
  5. After an hour I used mine Potato masher (affiliate link) to break the meat apart. At this point I was worried that I shouldn’t have added the water, but it worked fine.
  6. At two o’clock I mashed the mixture again with the potato masher, and the water was nicely absorbed.
  7. After three hours the minced meat starts to get exactly the texture I wanted.
  8. It was probably cooked enough at this point, but I let it cook for another 45 minutes or so.
  9. I made lots of small containers of seasoned ground beef to put in the freezer, and each container was enough to make a large taco salad or several tacos.
  10. Now I make Slow Cooker Taco Meat again and again, every time I run out of taco meat in the freezer!

Ingredients

  • 3 pounds lean ground beef (see notes)

  • 1/2 cup Cholula hot sauce or other hot sauce of your choice. (see comments)

  • 2 T ground cumin

  • 2 T garlic powder

  • 2 T onion powder

  • 1 teaspoon. coarsely ground black pepper (or less, to taste)

  • salt to taste (I only used about 1/2 teaspoon.)

  • 1/4 cup water (plus a little more water if using the smaller amount of hot sauce)

Instructions

  1. Thaw the ground beef in the refrigerator overnight, or if you forget to plan ahead, thaw it in hot water for about 20-30 minutes.
  2. Spray nonstick cooking spray on the slow cooker and place the thawed ground beef in the slow cooker, breaking it apart with your hands.
  3. Mix Cholula hot sauceground cumin, garlic powder, onion powder, black pepper, salt and water. Pour the hot sauce mixture over the minced meat and stir it into the meat with a large spoon.
  4. Cook the meat and spice mixture on the highest setting for 3-4 hours. After every hour, remove the lid and use an old fashioned one Potato masher (affiliate link) to puree the meat mixture about 8-10 times so that the meat is finely crumbled by the time it is done.
  5. If you are using a smaller amount of hot sauce, you may want to add a few tablespoons of water halfway through the cooking time. (You could probably cook this on low heat for 6-8 hours, pureeing it every few hours, but I haven’t tried that yet.)
  6. Use the taco meat mixture to make ground beef tacos, lettuce wrap tacos, or beef burritos of your choice.
  7. I freeze the Slow Cooker Taco Meat in small containers so I can quickly thaw it in the microwave when I’m craving a taco salad.

Comments

This recipe made with 1/2 cup of hot sauce is only mildly spicy; I often use as much as 3/4 cup of Cholula when I make it. But you can even use less than 1/2 cup of hot sauce initially if you prefer. Then taste it halfway through and decide if you want more hot sauce.

For this recipe, I used Cholula hot sauce, which contains no carbs. Buy the large bottle at Costco or a Mexican market.

I used lean ground beef with 9% fat; I wouldn’t use very fatty ground beef because you won’t drain the meat.
