This is how you make roll-ups with ham and pickle:

- Start by cutting the dill pickles lengthwise into quarters or sixths, depending on how large the pickles are.
- I had baby dills, so I bought smaller slices of ham to match the size of the pickles. If I were using my favorite dill pickles, I would just cut them crosswise.
- The only part of this recipe that is somewhat labor intensive is spreading the cream cheese on the ham, and if you let it sit and soften, it’s quite easy. Spread it lightly, otherwise the extra will ooze out when you cut the ham!
- Place a dill pickle spear on each slice of ham and prepare to roll them up. (If the ham was much wider than the pickle spear, I would cut it off before rolling it.)
- Roll the slice of ham around the pickle spear.
- Then place toothpicks in each roll and align them where you want to cut the ham. (With larger ham slices you can remove a maximum of 5 from a piece of ham, but with the smaller ham I only cut 3.)
- Cut the rolls so that each piece has a toothpick in it, arrange on a plate and serve.
- You can also make the Ham and Pickle Roll Ups without cream cheese if you have guests who cannot eat dairy, or if you want to reduce the carbs and calories even further.

2 large dill pickles
8 thin slices of deli ham
3 T cream cheese
Instructions
- Let the cream cheese sit at room temperature for at least 30 minutes before making it. (Or buy whipped cream cheese.)
- Cut the dill pickles lengthwise into quarters or sixths, depending on how thick the pickles are. You need as many sliced pickles as you do slices of ham.
- Spread each slice of ham with a very thin layer of cream cheese. (I used about 1 teaspoon of cream cheese on each slice of ham. The ham does not need to be completely covered in cream cheese.)
- Place a dill pickle on the edge of each slice of ham and cut the ham into pieces if it is much larger than the dill pickle spear. Roll the ham around the dill pickle and place toothpicks where you want to cut each piece. Cut into pieces so that each piece has a toothpick.
- Arrange the ham and pickle rolls on a plate and serve.
