It warms my heart to see that people all over the world love my egg white pudding made from hard-boiled or scrambled eggs! Even in Asia my pudding is a hit!

On my private group (which you can join for FREE), a woman named Leigh Martell posted a Matcha Protein Pudding recipe and I had to share it with you all! It’s so delicious!

HOW TO MAKE PROTEIN MATCH PUDDING

To make Protein Matcha Pudding, Leigh used Further Food chocolate and matcha collagen powder!

There have been many studies showing a wide range of collagen benefits. You get a lot of glycine from collagen. THIS STUDY showed that collagen-derived glycine is essential for maintaining the normal structure and strength of connective tissue, such as bone, skin, cartilage and blood vessels. Many other studies have shown benefits ranging from immune health, digestion, bone strength and much more. It also has great benefits for the skin and reduces wrinkles and aging. Smoking reduces collagen synthesis and that is why smokers have more wrinkles.

Another important advantage of collagen is that it is the second most fermentable substrate after FOS (fructo-oligosaccharides). This study showed that collagen is great for nourishing our gut flora, much better than almost any plant fiber (collagen is 7.96, while plant fiber is 1.53). The urge to feed the intestinal flora with lots of vegetable fibers is therefore really not necessary. Just add some collagen.

  • Place all ingredients in a blender and puree until very smooth. Taste and adjust the sweetness to your liking.

  • Store in an airtight container in the refrigerator for up to 6 days.

  • MATCHA PROTEIN ICE POPS: Place the puree into popsicle molds and freeze for at least 6 hours.
