I suspect anyone who loves pork chops will love this simple recipe where you brown seasoned pork chops, put them in the Instant Pot with low-sugar salsa and lime juice, and pressure cook them for just 2 minutes. How to make Instant Pot Salsa Pork Chops:

(This is just a summary of the steps for the recipe; scroll down for the full printable recipe. Or if you want the GO TO RECIPE link at the top of the page, which will take you directly to the full recipe.)

  1. Trim the excess fat from the pork tenderloins (if desired) and rub them with herbs.
  2. Heat the olive oil and fry the chops until well brown. (We browned them in a skillet, which was easy, but if you prefer, you can also brown them in two batches in the Instant Pot.)
  3. Spray Instant Pot with nonstick cooking spray and place browned chops in the bottom of the Instant Pot. (Spray Instant Pot before browning if doing so in the Instant Pot.)
  4. Combine Pace Picante sauce (affiliate link) with lime juice. (I used my freshly frozen lime juice for this.)
  5. Pour the salsa mixture over the chops.
  6. Lock the lid of the Instant Pot and set to MANUAL, HIGH PRESSURE, 2 minutes.
  7. Allow Instant Pot NATURAL RELEASE for ten minutes and then release the pressure.
  8. Turn on the grill and place the pork chops in a broiler-safe baking dish.
  9. Set Instant Pot to SAUTE, HIGH and cook 5 minutes to thicken the sauce.
  10. Spoon thicker parts of the sauce over the chops in the baking dish. (You don’t need all the sauce.)
  11. Sprinkle with grated Mexican Blend Cheese.
  12. Roast until the cheese has melted.
  13. Serve Instant Pot Salsa Pork Chops hot, with extra sauce on the side. These are delicious with sour cream or avocado cubes to add to the table.

Ingredients

  • 6 boneless pork tenderloins

  • 3/4 tsp. ground cumin

  • 3/4 tsp. garlic powder

  • salt and freshly ground black pepper to taste (see notes)

  • 1 T olive oil

  • 1 1/2 cups Pace Picante sauce

  • 3 T freshly squeezed lemon juice

  • 1 cup grated Mexican cheese blend

Instructions

  1. Trim excess fat from the pork tenderloins (if desired) and rub them with a mixture of ground cumin, garlic powder, salt and freshly ground black pepper.
  2. Heat olive oil in a large skillet over medium heat. Add the chops and fry until nicely browned on each side. (Browning improves the flavor, so I don’t recommend skipping this step. You can brown the chops in the Instant Pot in two batches, if desired.
  3. Spray Instant Pot with nonstick cooking spray. (Do this before browning the chops if you are browning them in the Instant Pot.)
  4. Place the browned pork chops in the bottom of the Instant Pot.
  5. Combine Pace Picante Sauce (other low-sugar salsa) with freshly squeezed lime juice. (I used my freshly frozen lime juice for this.)
  6. Pour the salsa mixture over the chops.
  7. Lock the lid of the Instant Pot and set to MANUAL, HIGH PRESSURE, 2 minutes.
  8. At the end of the time, let Instant Pot NATURAL RELEASE sit for ten minutes and then release the pressure.
  9. Turn on the grill and place the pork chops in a broiler-safe baking dish.
  10. Set Instant Pot to SAUTE, HIGH and cook 5 minutes to thicken the sauce.
  11. Use a slotted spoon to spoon thicker portions of the sauce over the chops in the baking dish. (You don’t have to use all the sauce.)
  12. Sprinkle with grated Mexican Blend Cheese.
  13. Broil until the cheese is melted, about 3-4 minutes, but watch carefully if you have a high-powered grill.
  14. Serve the Salsa pork chops warm, with extra sauce on the side and diced avocado, sour cream or Green Tabasco sauce (affiliate link) to add to the table if desired.

Comments

I used about 1/2 tsp. salt and a little less black pepper. I love Pace Picante sauce (affiliate link) but any low sugar salsa will work for this recipe.
