This Bacon Onion Jam is a spread made from cooked bacon, caramelized onions and simple ingredients such as brown sugar, vinegar, coffee and maple syrup. These ingredients simmer until thick and jammy. It’s sweet, smoky and savory all at the same time. Use it as a topping for burgers, sandwiches, crackers or cheese boards.

  • Cooking bacon: Cook in a large skillet over medium heat 12 slices of bacon (chopped) until crispy, about 10-12 minutes. Transfer the bacon to a plate, reserving about 2 tablespoons of bacon fat in the pan.

  • Cook onions and garlic: Reduce stovetop heat to medium-low and add 2 large yellow onions (cut into cubes) into the skillet and cook for about 15 minutes, stirring occasionally and scraping up the browned bits from the bottom of the pan, until soft and jammy. Stir it 3 cloves of garlic (chopped) and cook for another 1 minute.

  • Add remaining ingredients: Return the cooked bacon to the pan. Stir it ½ cup brown sugar, ¼ cup apple cider vinegar, ¼ cup of brewed coffee, 2 Tablespoons maple syrup, ½ teaspoon smoked paprika powderAnd ¼ teaspoon black pepper until everything is evenly mixed.

  • Simmer: Reduce heat and let the mixture cook uncovered for about 20 minutes, stirring occasionally, until it thickens and becomes sticky.

  • Mixture (optional): If you want a smoother jam, pulse it a few times in a food processor. Keep it coarse if you like more texture.

  • Cool and serve or store: If serving immediately, let it cool briefly until warm (not hot) and then spoon it onto your plate. To store: cool completely, transfer to a jar and refrigerate for up to 1 week or freeze for up to 2 months.

Fridge storage: Store the cooled bacon and onion jam in an airtight jar or container in the refrigerator for up to 1 week.
Freezer storage: Freeze the jam for up to 2 months. Use a freezer container and leave some room at the top for expansion. Let it thaw in the refrigerator overnight and then stir before using.
Warm-up instructions: Heat the jam in a frying pan over low heat or microwave it for 10-15 seconds until it loosens. If it feels too thick, add a small splash of water to return it to a smooth, spreadable texture.
