  1. Add proteins and a pinch of salt to a bowl. Add gelatin with an electric whisk or mixer while you beat until the stiff peaks occur.
  2. Beat in a separate bowl of egg yolks (and optional vanilla) until it is creamy. Add collagen and beat until pale and completely recorded.
  3. Carefully fold the beaten protein in the yolk mixture and make sure that you do not empty the batter. It must be light and airy.
  4. Heat a frying pan with anti-stick over medium heat and grease light with butter or ghee.
  5. Spoon ~ 2–3 tablespoons batter per pancake in the pan. Cover with a lid and cook for 2-3 minutes per side, until golden brown and set.
  6. Stack and serve warm with your favorite toppings.
