Chicken Alfredo Soup and World’s Easiest Cookies ($10 Family Dinner Idea)

This warm, creamy chicken Alfredo soup pairs perfectly with the easiest cookies ever, made with just 4 ingredients. Your whole family will enjoy this cozy, comforting dinner and you’ll love that it takes less than 30 minutes and less than $10 to make!

Both menu items were inspired by items I got for free with coupons! The fettucini noodles were a money maker at Publix this past week, and the cookies are my favorite way to use up the free mayonnaise I get at Publix every few months. Believe it or not, my family refuses to eat mayonnaise in its natural state! So I have to think of creative ways to use it anyway. And in case you’re wondering: NO, you can’t taste the mayonnaise in these cookies at all (if you could, my family would refuse to eat them!).

The soup is so delicious, creamy and filling. Best of all, it’s so super easy! I have adapted this recipe to make it even easier and faster (and also less expensive). It’s a nice change from the regular chicken noodle soup, and it’s easily ready in less than 30 minutes.

The cookies are literally THE easiest and fastest cookies you will ever make. They only take four ingredients, and I can get them baked in the oven in about 5 minutes (plus, they completely skip the “cutting into the butter” step, which is pretty much my least favorite thing to do in the kitchen).

  • 1 onion (Aldi – $2.86 for 4 pounds) –$0.30
  • 9 oz fettucine (Publix – money maker with coupon) — free
  • 3 cloves of garlic (Aldi – $1.75 for a 3ct pack) –$0.20
  • 6 tablespoons of flour (Harris Teeter – $1.97 for 5 pounds) — $0.04
  • 6 chicken stock cubes + 6 cups water (Aldi – $1.79 for 25 cubes) –$0.46
  • 1/4 teaspoon salt
  • pepper, to taste
  • 1 teaspoon Italian herbs
  • 2 additional cups of water
  • 1 16 oz bag of frozen broccoli florets – (Publix) – $1.15
  • 1/2 cup Parmesan cheese (Aldi – $2.99 ​​for 8oz) –$0.60
  • 1 cup heavy whipping cream (Aldi – $4.99 for 32oz) –$0.62
  • 1 tablespoon lemon juice – $0.15

Total for Chicken Alfredo Soup: $6.33 (serves 6)

Ingredients for cookies Recipe:*

  • 3 cups of flour (Harris Teeter – $1.97 for 5 pounds) — $0.30
  • 3/4 cup mayonnaise (Publix – free with coupon) free
  • 1/2 teaspoon salt
  • 2 teaspoons of baking powder
  • 1 1/2 cups milk (Aldi – $3.04 for 1 gallon) $0.29

Total for Chicken Alfredo Soup: $0.59 (for 18 cookies)

Grand total for dinner: $6.92 (serves 6 with leftover cookies)

Even if you don’t use coupons or shop at the same stores I shop at, you should still be able to make these recipes for $10 or less because I allowed plenty of wiggle room in the budget!

How to make chicken Alfredo soup:

1. Melt 3 tablespoons of butter in a large saucepan. Finely chop the onion and garlic cloves and fry them in the butter until done.

In a pot on the stove are chopped onions and garlic cloves.

2. Stir in the 6 tablespoons of flour. Gradually add the 6 cups chicken broth, 1 cup heavy cream, 1 teaspoon salt and another 2 cups water and stir and heat over medium heat until thick.

Creamy soup is stirred in a stainless steel pot.

3. Add the package of frozen broccoli and 250 ml of fettucine and cook until tender (Note: You will need to check the suggested cooking times on both the pasta and broccoli packages and adjust them when you put them in the pot depending on how long they need to cook. The Buitoni brand of fettucini I used only required 2 minutes of cooking, so I added it after the broccoli had already cooked for a few minutes).

4. Stir in the cooked chopped chicken, 1/2 cup Parmesan cheese, and 1 T lemon juice. Remove from heat. Add Italian herbs (or fresh parsley) and salt and pepper to taste.

Here’s how to make the easiest mayonnaise cookies ever:

1. Follow the recipe here. I did the recipe exactly as written, but took all the ingredients times 1 1/2 to make 18 cookies.

The Buitoni brand fettuccini I used only needed to cook for 2 minutes, so I added this after the broccoli had already cooked for a few minutes).

  • Stir in the cooked chopped chicken, 1/2 cup Parmesan cheese, and 1 tablespoon lemon juice.

  • Remove from heat.

  • Add Italian herbs (or fresh parsley) and salt and pepper to taste.

Instructions for making simple mayonnaise cookies:

  • Preheat the oven to 400 degrees.

  • Combine the dry ingredients in a medium bowl.

  • Add the mayonnaise and milk. Stir until it forms a soft dough ball.

  • Place the dough on a floured surface. (If the dough is sticky, you can add additional flour.)

  • Roll or pat out the dough until it is about 1/2 – 3/4″ thick. Cut out the cookies using a cookie cutter or the rim of a drinking glass.

  • Place the cookies about 1 inch apart on a baking sheet. Bake for 12 minutes.
