How to stir cheese -like zucchini, stir -fry:

- Trim the ends of zucchini and cut the zucchini into the half moon into slices of approximately 1 // 2 inch thick.
- Heat a non-stick pan over medium heat, add the olive oil and chopped garlic, heat until you smell the garlic.
- Then add the zucchini, stir, cover and cook for about 4 minutes.
- Discover and cook for a few more minutes.
- When zucchini is soft but still a little fresh, sprinkle with generous amount of chopped parsley and salt to taste and let it wilt.
- Sprinkle Parmesan cheese over and let it melt for a minute or so.
- Then sprinkle with grated mozzarella, cover the pan and turn off the heat.
- Let it sit until the cheese is nicely melted and then serve immediately!

3 average zucchini, cut into 1/2 inch thick slices (see nuts)
2 t olive oil
2 t minced garlic (see comments)
Sea salt to taste
1/2 cup of chopped flat parsley
3 t coarse grated Parmesan cheese
1/2 cup of grated mozzarella cheese
Instructions
- Cut both ends of the zucchini and then cut into 1/2 inch thick slices (if zucchini is larger, in the length of half or the fourth cut and then.
- Heat an anti-stick pan over medium heat, heat the olive oil in a large frying pan with a lid; I used my favorite Green pan 12 inch frying pan (affiliated link).
- Add chopped garlic and cook for about 1 minute, or until your garlic starts to smell.
- Add pumpkin and stir with oil and garlic, then cover and cook for 4-5 minutes, stir once or twice.
- Check after 4-5 minutes to see if there is a lot of liquid and whether squash is soft. Cook for 1-2 minutes, uncovered until the zucchini is tender-crisp and liquid is evaporated.
- Sprinkle pumpkin with salt and chopped parsley and stir to wilt parsley.
- Add Parmesan cheese and cook until it melts, about 1 minute.
- Sprinkle mozzarella cheese over the pumpkin, cover the pan and turn off the heat.
- Let sit for 1-2 minutes until cheese has melted and serve the zucchini stir-fry.
Notes
If the zucchini is larger, lengthwise in half or fourth, cut them. Dressed garlic from a pot is great for this, but use fresh garlic if you prefer.
