  • Preheat oven to 350 degrees F. Grease a small loaf pan and set aside.

  • Place the egg whites in a large bowl or in a standing mixer bowl. Add salt and beat on high until stiff peaks form. Add the Jay Robb vanilla egg white and mix gently until well combined. Pour the batter into the prepared loaf pan. Pre-bake 30 minutes. Let cool completely before cutting the ladyfingers.

  • To make the coffee dip, place all the ingredients in a small bowl and stir with a spoon. Taste and adjust the sweetness to your liking.

  • To make the filling, place the egg yolks and allulose in a heatproof bowl. Using a double boiler (or a metal bowl over a pot of simmering water), beat the yolks (or use a hand mixer) until it thickens. Remove from heat and pour into another bowl to stop cooking. Place it in the refrigerator to cool before combining it with the mascarpone. Once cool, place the mascarpone in a medium bowl and use a hand mixer to loosen. Add the cooled yolks and mix well. Taste and adjust the sweetness to your liking.

  • Place the cream in another large bowl and beat until medium peaks form and set aside (or put the cream in a cream van, it makes this so easy!). Fold the whipped cream into the mascarpone cheese mixture until smooth.
  • To assemble the bread, cut the bread into ladyfinger shapes and cut off the crust. Drip each ladyfinger into the coffee dip so that they absorb the coffee. Place a layer of ladyfingers in a nice bowl measuring at least 20 x 20 cm and at least 10 cm high (the option is to line the bowl with baking paper so that you can remove it and serve outside the bowl, but serving in a nice bowl also works).

  • Place 1/2 of the zabaglione filling over the ladyfingers. Repeat with ladyfingers and filling.
