HOW TO MAKE CARNIVORE RISOTTO

To make my carnivore risotto, I used Further Food Gelatin! Gelatin is a staple in my diet and I think it should be in yours too!

Gelatin is more than a wobbly dessert: it’s a powerhouse of healing amino acids derived from collagen. As our modern diets have moved away from nose-to-tail eating, gelatin has quietly faded from the spotlight. But research and ancestral wisdom are bringing it back – and for good reason.

Prevent your screen from going dark

  • Grease a large HEALTHY non-stick pan with butter. Add the liquid egg whites and whisk in the gelatin and let stand for 2 minutes to soften the gelatin. Add the salt and heat to medium heat. Stir the mixture until the eggs are completely cooked. Remove from heat. Allow to cool and place in a food processor and process until you get chunks of “rice”. Set aside.

  • To make the risotto, place the butter in a frying pan and heat it over medium heat. Add the onion (if using) and cook for 2 minutes. Add the garlic (if using) and cook for an additional 2 minutes or until the garlic is fragrant and the onions are soft.

  • Reduce the heat to low and add the soft cream cheese. Beat the cream cheese and gradually add the stock. Once the cream cheese and stock are well combined, add the grated Parmesan cheese and stir to combine well. Add the carnivore rice and stir until combined. Taste and adjust the seasoning to your own taste.

  • Serve hot. Store extras in an airtight container in the refrigerator for up to 5 days. Do not freeze.
