We love chicken soup as a meal all year round, but especially during the winter months as a comforting meal to keep us nourished and healthy.
The simple ingredients for 5-ingredient chicken soup

To make the simple recipe you will need the following 5 ingredients:
Chicken – you can add a piece of chicken of your choice, my choice is to use skin on bone chicken thighs, legs or wings for maximum flavor and nutrition. You can also use leftover rotisserie chicken or add a few chopped chicken breasts.
Onion – Cut the desired onion, red onion, brown onion or spring onions.

Garlic – for a rich garlic flavor, chop 3-4 fresh garlic cloves or more, depending on how much garlic flavor you want in your soup.
Carrots – always an essential part of chicken soup for me. I keep my carrots unpeeled because of the added beneficial fiber, but feel free to peel them if you prefer.
Apple cider vinegar – to both balance the soup’s flavor and add incredible potential nutritional benefits, a tablespoon of apple cider vinegar is a must in chicken soup recipes. (Source.)

Chicken soup recipe with 5 ingredients
- 1 kg/2.2 lbs chicken
- 1 medium onion, peeled and chopped
- 3-4 cloves of garlic, peeled and chopped
- 2-3 Large Carrots, chopped
- 1 tablespoon apple cider vinegar
- Heat olive oil or butter in a large stockpot over medium heat on the stovetop.
- Meanwhile, open the chicken and sprinkle on a few shakes of optional spices, such as salt and black pepper, to taste.
- When the large pan is hot, add the chopped onion and garlic and cook until soft, adding more oil or butter if necessary.
- Once the onion and garlic are soft, add the raw chicken and stir the chicken frequently to brown on all sides.
- Add the chopped carrots and cook until the chicken is lightly browned.
- Pour cold water over the chicken and vegetables, add the apple cider vinegar and more salt and pepper to taste and bring the soup to the boil.
- Once boiling, reduce heat to low, cover the pot with a lid and simmer gently for 1 to 1.5 hours, or until the chicken is tender and the soup is seasoned to your liking.
- Enjoy the chicken stock right away or let the finished soup cool completely, refrigerate overnight, and enjoy a more flavorful soup the next day. Store leftovers in an airtight container and enjoy within a few days.
