- Do not skip the oil. During my tests, brushing the frozen steak with a thin layer of oil helped the herbs stick better and encouraged a golden crust, even without defrosting (you can see it on my photos).
- Don’t be shy with the herbs. Because we use frozen steaks, we cannot marinate them and the herbs do not have that much time to absorb in the meat. This means that we have to add more herbs than normal to give taste.
- Change the herbs. I have kept the herbs fairly conservative, but you can use your favorite herbs or steak herb people.
