This Sausage and Pepperoni Layered Pizza Bake is exactly the kind of low-carb comfort food people want in January! And depending on the ingredients you choose, this pizza baking recipe can be low carb or Keto. And it can also be adapted to be South Beach Diet-friendly or meatless, if you wish.
The pizza baking recipe started as an idea to try layering Cheese packaging folios in a baking dish with pizza ingredients. When I tried that with Kara, we loved the pizza flavors, but Kara thought the original Keto version was a bit greasy. That’s why we also tested a low-carb version in which the pizza ingredients are incorporated in layers Mission Carb Balance Low Carb Tortillas (affiliate link).
Kara’s family loved the low-carb version. And once we switched to reduced-fat pepperoni, we both loved the Keto version made with cheese wraps. That’s why we decided to post the recipe for baking pizza and give people the choice of which ingredient to use as a base. What is a pizza tray?
Pizza Bake in the title of this recipe refers to a low-carb layered casserole with pizza flavors.
How did we keep the pizza baking recipe low in carbohydrates?
There were a few choices that made this low carb. I used Italian turkey sausage for the sausage and we used Hormel 25% less fat pepperoni for the pepperoni. (This is especially beneficial for the Keto version, where there’s a lot of fat and nothing to absorb it.) For both ingredients, I took great care to choose one that was low in carbs. And we used Rao’s pizza sauce, which has only 12 carbs in the entire bottle! (For the record, none of these companies paid me to promote their products.)
How low in carbohydrates is the Pizza Bake?
- The Keto version of this recipe, made with Folios Parmesan Cheese Wraps, contains 2.7 net carbs and 31.5 grams of protein.
- The Low-Carb version of this recipe, made with Mission Carb Balance Low-Carb Tortillas, contains 5.1 net carbs and 29 grams of protein.
- Nutritional calculations are based on 8 servings in the entire Pizza Bake.
What other pizza baking variations can you make?
There are certainly other variations on this recipe that you can think of to suit your eating preferences. You could use turkey pepperoni and low-carb mozzarella to make a version for fans of the original South Beach Diet. Or choose vegetarian pizza toppings to make it a meatless dish! And if you make the version with Folios, this recipe is also gluten-free.

The photo at the top of this post is the low carb pizza baking recipe. This is the Keto version, which definitely has more fat as you can see. However, I loved this and have made it a few more times since we worked on the recipe! The process shots below are from the Keto version.

How to make a layered pizza with sausage and pepperoni:

- Heat the oven to 425F/220C. Spray a 9×13-inch baking dish with olive oil or nonstick cooking spray.
- Heat olive oil in a non-stick frying pan and fry the Italian Sausage until it is nicely browned.
- Add Rao’s pizza sauce (affiliate link) or a low sugar pizza sauce and simmer for about 5 minutes.
- Cut 5 Cheese packaging folios (or 7 Mission Carb Balance Low Carb Tortillas – affiliate link) in half, then arrange with the straight side along the edge of the baking dish and one cut-out piece covering the center, as shown.
- Place 1 cup of grated mozzarella cheese on top.
- Top the cheese with 21 pieces of pepperoni and a generous pinch of dried Greek oregano (affiliate link).
- Then make another layer of Folios (or low-carb tortillas), sausage/sauce mixture, cheese, pepperoni, and Greek oregano.
- Bake for about 20 minutes, or until the cheese is melted and piping hot and nicely browned.
- Serve the Pizza Bake warm and enjoy!

1 19.5 oz. package. turkey italian sausage
1 13 oz. jar Rao’s Pizza Sauce (see notes)
5 Folios Parmesan Cheese Wraps (see notes)
2 cups grated mozzarella cheese
42 slices of Hormel 25% low fat pepperoni
1 teaspoon. dried oregano, divided
Instructions
- Heat the oven to 425F/220C. Spray a 9×13-inch baking dish with olive oil or nonstick cooking spray. (I used a metal baking dish, but I’m sure glass or ceramic will work too.)
- Heat olive oil in a non-stick frying pan and fry the Italian Sausage until it is nicely browned. (I use a potato masher (affiliate link) to take it apart.
- Add the Rao’s Pizza Sauce (affiliate link) or a low-sugar pizza sauce and simmer for about 5 minutes, until the sauce has thickened slightly and the sausage is seasoned with the sauce.
- Cut 5 Cheese packaging folios (or 7 Mission Carb Balance Low Carb Tortillas – affiliate link) in half, then place the straight side along the edge of the baking dish and one cut piece covering the center, as shown. (If your baking dish is not as large as I used, you will need more Folios or low-carb tortillas to make each layer.)
- Then divide half of the sausage/sauce mixture over the folios (or tortillas).
- Place 1 cup of grated mozzarella cheese on top. (We used full-fat mozzarella, but choose your own.)
- Top the cheese with 21 pieces of pepperoni and a generous pinch of dried Greek oregano (affiliate link).
- Then make another layer of Folios (or low-carb tortillas), sausage/sauce mixture, cheese, pepperoni, and Greek oregano.
- Bake for about 20 minutes, or until the cheese has melted and the Pizza Bake is piping hot and nicely browned. (I would start checking after 15 minutes.)
- Serve the Pizza Bake warm and enjoy!

I find Folios Parmesan Cheese Wraps at Costco in my city.
For the low-carb version, replace the folios with 7 Mission Carb Balance Low Carb Tortillas. The estimated nutritional information with that change is: Calories 329, Total Fat 19.8, Saturated Fat 6.3, Unsaturated Fat 8.5, Cholesterol 89, Sodium 1055, Carbohydrate 18.2, Fiber 13.1 Sugar 1.8, Protein 29.

Suggestions for a low-carb diet / low-glycemic diet / South Beach diet:
Whatever you choose for the crust ingredient for this pizza bake, this recipe can be great for low-carb or Keto diet plans. Use low-sugar pizza sauce for any carb-conscious diet.
- For Keto Folios, use Cheese Wraps as a base and full-fat cheese. (I would still use the lean pepperoni and Italian turkey sausage, as it is high in fat; your choice on that.)
- For low-carb, use the low-carb tortillas for the base, Italian turkey sausage, reduced-fat pepperoni, and full-fat cheese. (Although even with the low-carb tortillas, this is a pretty good option for Keto!)
- For the original South Beach (phase two or three), use low-carb tortillas, Italian turkey sausage, turkey pepperoni, and reduced-fat mozzarella. (The fat content for the South Beach version will be a lot lower than what is shown for low-carb if you make these changes, but this can still be a personal choice.)
