Santa’s beard
Always test first so that the ‘beard’ comes out as fluff before you sprinkle the drink.
1 drink
Time: 20 minutes
You need:
4–5 cl gin
10 cl cranberry juice or lingonberry drink
3 cl cinnamon sugar coating
1 large ice cube
Beard:
2 dl concentrated elderberry drink
2 egg whites
Cinnamon Sugar Topping:
1 dl sugar
1 dl water
2 whole cinnamon sticks
Do this:
- Cinnamon icing: Bring sugar, water and cinnamon sticks to a rapid boil in a saucepan. Remove from heat when the sugar crystals have completely melted and let the layers cool. You can leave the cinnamon sticks for a long time to give them a lot of flavor (you can prepare this a few days in advance).
- Lightly beat the concentrated elderberry drink with the egg white and pour it into a whipped cream siphon. Press two cartridges into the siphon, shake it and place it in the refrigerator until use. If you don’t have a siphon, you can shake the ingredients in a shaker with ice for at least one minute. You will get a fluffy foam, but it cannot be sprayed, but you need to spoon it onto the drink.
- Pour the gin, cranberry juice and cinnamon sugar topping into a shaker. Add a large ice cube, close the shaker and shake thoroughly until cold.
- Pour the mixture into a glass and remove the siphon. Sprinkle Santa’s beard over it and serve immediately!
