Happy Thanksgiving to all my readers! In a few hours I will be celebrating Thanksgiving with my sister Laurel and some of her family. I don’t normally update the website on Thursdays, but I wanted people who subscribe to the site to get this recipe Low Carb Turkey Soup with Zucchini in their inbox on Friday morning. And if you have any leftover turkey, I hope you’ll make this soup or one of my other low-carb turkey leftover recipes!

This soup is perfect to make the day after Thanksgiving! When we tested this low-carb turkey soup recipe, we gobbled it up, even though it was the end of a long day of recipe testing and we weren’t really that hungry. I used to make this tasty soup with zucchini noodles, but now they are not that important anymore, and this soup will be just as delicious (if not better) with small cubes of zucchini.

Take your pick, but trust me when I say you won’t miss the traditional high-carb ingredients like potatoes or noodles in this delicious turkey soup! And if you don’t have leftover turkey, you can also make this soup with chicken. I hope it’s a hit at your house!

How do you make low-carb turkey soup even tastier?

If you use your turkey carcass and make homemade turkey stock, this soup will be even more delicious, so I highly recommend it if you have a turkey carcass. But even if you have to use canned or boxed chicken stock (or add water). Better than Broth Turkey Base (affiliate link), this soup will still taste delicious.

How low in carbohydrates is the Turkey Soup with Zucchini?

Whether you use zucchini noodles or small cubes of zucchini, this low-carb turkey soup contains only 4.5 net carbs per serving and 33 grams of protein.

This is how you make low-carb turkey soup with zucchini:

  1. Cut the onion, celery and carrots, heat the olive oil and cook the vegetables briefly in the soup pan with the herbs.
  2. Add the turkey or chicken stock and cook for 30 minutes.
  3. Chop the remaining turkey into pieces so that you get about 3 cups of diced turkey.
  4. Add the chopped turkey to the soup and simmer for about 10 more minutes.
  5. While the soup is cooking, cut the zucchini into small ½-inch pieces or make zucchini noodles. For zucchini noodles I would recommend the Spiralizer (affiliate link) to make short thick noodles.
  6. Add the zucchini pieces or zucchini noodles to the soup and simmer for another 20 minutes, or until the zucchini is as soft as you like.
  7. Season the turkey soup with zucchini soup with freshly ground black pepper and serve warm.
  8. I promise no one will think this is low carb turkey soup when they eat it!

Ingredients

  • 1 onion

  • 1 cup diced celery

  • 1/2 cup chopped carrots

  • 2 tsp. olive oil

  • 1 teaspoon. dried thyme

  • 1 teaspoon. poultry seasoning

  • 1/2 tsp. Spike herbs (see notes)

  • 12 cups stock (see notes)

  • 3 cups diced cooked turkey (or chicken)

  • 1 large zucchini (see notes)

  • freshly ground black pepper to taste

Instructions

  • Cut the onions, celery and carrots into small pieces, less than 1/2 inch wide.
  • Heat olive oil in the soup pan and fry the vegetables for a few minutes. Then add the thyme, poultry herbs and Spike herbs (affiliate link) and cook about a minute longer.
  • Add the stock or broth and let the soup cook over low heat.
  • Once it comes to a low boil, cook it for 30 minutes.
  • While the soup is cooking, cut the turkey into small, bite-sized pieces.
  • Cut the ends off the zucchini and cut it into small ½ inch pieces or make zucchini noodles, whatever you prefer. (If you make noodles with a Spiralizer (affiliate link) use the medium knife and cut a slit halfway down the zucchini lengthwise to get short crescent noodles; Then cut the noodles into smaller pieces with kitchen scissors.)
  • When the vegetables and stock have cooked for about 30 minutes, add the turkey pieces and simmer for about 10 more minutes. (Depending on the high temperature you used, you may want to add some water at this point.)
  • Then add the diced zucchini (or zucchini noodles) and simmer for another 20 minutes, or until the zucchini is as soft as you like.
  • Season the low-carb turkey soup with freshly ground black pepper and serve hot.
