Tired of eggs for breakfast? You do not have to resort to very processed baked products to have a nice treat in the morning. These almond muffins are a wonderful option for breakfast, snacks or dessert. You can also add your favorite mix-ins for an adjustable muffin.

I usually have eggs, fermented vegetables and even fish for breakfast. Although my breakfast choices are sometimes a bit unconventional, I stay with high protein options. Healthy fats for blood sugar regulation are also a must.

Almond muffins

Not all my children are on board with sardines for breakfast, so they prefer to throw in some gluten -free muffins. We have made many coconut muffins over the years. These almond muffins are also grain -free, paleo, refined sugar -free and dairy -free.

You can make them low-carbohydrate and keto-friendly if you omit the arrow powder and coconut sugar. Exchange the bananas for yogurt if you are looking for Keto -Muffins.

Use either blanched almond flour or almond meal, depending on what you have. I really like to add the arrow root powder to give it a texture comparable to regular wheat flour muffins. I don’t like my baked goods very sweet, so this recipe is mild sweet. If you prefer your muffins, taste and fit the sweetener in the batter if necessary.

Fluffy almond soup muffin recipe

These delicious muffins can be adjusted with your favorite ingredients. Great like a snack, dessert or even a fast breakfast!

  • Preheat the oven to 350 ° F. Cover a muffin pan with 12 seconds with silicone muffers, parchment paper Voers or fat light with coconut oil.

  • In a large bowl, beat the almond flour, arrow root, baking powder, baking powder, salt and cinnamon.

  • Beat in a separate mixing bowl, beat the eggs, puree banana, coconut sugar, melted butter or oil, milk and vanilla. Add lemon juice or ACV here.

  • Freezer -Tip: Allow muffins to cool completely, save in an airtight container or reusable bag in the freezer for a maximum of 3 months. Heat again in the toaster oven or oven for a quick snack.

You can add any mix-ins that you like to the recipe of the basic muffin above. Try dried or fresh fruit, nuts, chocolate flakes or grated coconut. Here are more ideas for different flavors:

Add to the basic recipe:

  • Replace cinnamon with 2–3 tablespoons of unsweetened cocoa powder
  • Use ½ cup of dark chocolate chips or chunks
  • Add 1-2 tablespoons of maple syrup if you like them sweeter

Tip: Sprinkle a few chocolate flakes on top before baking it for that bakery style look.

Add to the basic recipe:

  • Add ¾ cup of finely grated carrots
  • Add ¼ cup of raisins (optional)
  • Add ½ teaspoon of nutmeg + ½ teaspoon of ginger

Add:

  • Lemon zest of 1 lemon + 1 tbsp lemon juice
  • ½ cup of fresh or frozen blueberries (throw in almond flour before adding to batter)
  • Optional: Sprinkle a simple lemon glaze after baking with lemon juice + coconut sugar in powder

5. Zucchini almond bobins muffins

Add:

  • ½ cup of grated zucchini (squeeze out moisture first)
  • Stay with bananas if your sweetener
  • Add a dash of cinnamon + nutmeg
  • Optional: ¼ cup of chopped walnuts or mini chocolate flakes
