Sharing some of my go-to-easy dinner ideas when I am solo parenting.
Hello friends! How are you? I hope you enjoy the week so far! Today I have a podcast interview, Pilates, and we will probably hit the pool. We try to live the last piece of summer before we get back to school.
For today’s message I wanted to share some of my favorite ideas for easy dinner when I’m solo parenting. Because the pilot is back at the airlines, he is back to travel regularly while I hold him here with the crew. When he is gone, his meals much more casual. These are things that I can make in less than 20 minutes that I know we all love. I usually make something that includes leftovers, so that we can enjoy it the next day for lunch.
For our family, meals include a kind of proteins, a kind of starch, a fruit and/or vegetable. It makes it pretty plug and play, and when the children like these have completed meals, are they happier (no blood sugar accident) and maybe a little less snacky? (Although we are real, the summer is a snack avalanche all day.)
Here are some of the things that I have in the rotation when I am alone and I want something tasty, healthy and fast.
Easy solo education dinner ideas
– Breakfast for dinner.
We do this at least once a week, whether the pilot is here or not, because it is a crowd puller and you can adjust it based on what you have. I might be able to make Hello Kitty gluten -free waffles, pancakes (they still love these banana pancakes after all these years), French toast, and serve it with breakfast sausage, bacon or eggs as a protein and some fruit.

– Tacos, rice and beans.
I put the chicken in the instant jar with oregano, salt, pepper, garlic powder and some chicken broth and cook on manual for 12 minutes. I fragped it with the mixer and serve with tortillas, beans, Mexican rice and guac. I will cut the fresh fruit by hand and serve it on the side.

– Spanish tortilla.
This is one of our favorites of all time. I cook the tortilla and often just serve it with sliced vegetables and guac, and a side of fruit.

– Greek slags.
This is another family fave: chopped salad (you can use a set to make life easier, or just romaine, tomatoes, red onion, cucumber, and kalamata olives and feta), cooked chicken (rotisserie or remaining chicken), hummus (storebought, and can be able to squeeze, and can be squeezed, and can be squeezed from a canceling, and can be squeezed from a canceling, can of a jug of a jug). Serve Pita on the side.

-Gluten -free chicken nuggets
I order that of Butcher And serve with salad and fruit. Simple Peasy.
– windows with grated chicken or shrimp.
I buy windows from Whole Foods (they have a few gluten -free options) and add grated chicken or fried shrimp and cut fruit on the side.
– Roerse Fry Noodelkom.
I will stir a lot of vegetables (bell pepper, onion, broccoli, carrot, everything we have at hand), and add boiled noodles and a peanut sauce with peanut butter, tamari, rice wine, sesame oil, garlic, ginger, sriacha and honey. I make the sauce while the vegetables and noodles cook, and everything is done so quickly. I am usually top with sesame seeds and coriander.
– Salmon Sushi Roll Bowl.
We often have this. It is just cooked rice (cooked in the instant pot with equal parts broth/water and rice), salmon (cooked in the air fryer), cucumber, edamame, avocado and seaweed.

– egg roll in a bowl.
Just fry some ground meat with a cabbage/slay mix, garlic, ginger and seasoned with tamari, sriracha and sesame oil. Top with anything but the bagal herbs. I will serve with fresh fruit – just what we have at hand.
– Homemade pizza.
Dough, sauce, pepperoni, cheese and served with a salad or roasted vegetables.
– Pan – meals!
We especially like the biological chicken sausage from Costco, pepper and broccoli
– Kevin’s sauce meal.
This is another fanfave. Kevin’s makes great sauces – I buy them from Thrive market – And I will just cook a lot of vegetables, add some chicken, steak, salmon or shrimp and add the Kevin’s sauce before serving rice. We love the Teriyaki, Korean BBQ and Coconut Curry.
– Turkey meatballs with pasta, sauce and a vegetarian.
I usually make the turkey meatballs in advance and I freeze them for an easy/fast meal. This is my go-to recipe
