When we were on safari in Xigera in Botswana, we had a great time! We have been to this safari lodge before and it was our favorite lodge. Four years ago we met Chef Ziyaad Brown, who is not only super nice, he is also very creative! I only wish I had more time to spend with Xigera so I could put our brains together for some really crazy recipe ideas!
Chef Ziyaad asked us before every meal what our hearts desired, and for most lunches we asked for hamburger patties. Well, the chef wasn’t okay with just serving us hamburger patties; he also made chicken fries, as well as a cottage cheese dip, which I’ll write up for you soon! They were both so delicious, I had to ask Chef for his recipes!
Even though I wasn’t feeling well (due to the poisonous spider bites), the chef made comfort food that was so delicious and made me laugh!
NOTE ABOUT MAKING CHICKEN FRIES
The chef used 2.2 pounds of chicken in his recipe, but when I played around with the recipe, I used half the amount of chicken and found the fries to be a little more tender and less dry. So depending on your preference, you can play with the recipe too!

Chicken Fries

Prevent your screen from going dark
- Using a bowl cutter/blender, add all the ingredients and blend until it resembles a smooth and light paste.
Preheat an oven to 320*F and grease or line a loaf pan with parchment paper.
Pour the chicken mixture into the prepared loaf pan.
Pre-fry in a water bath 45 minutes until it resembles a chicken loaf.
Let cool completely or overnight to settle. Cut into ‘fries’.
Heat a cast-iron frying pan with a few tablespoons of tallow and fry the chicken fries on all sides until golden brown.
Sprinkle with Parmesan cheese (and truffle oil if desired) and enjoy!
