Cheesy Crustless Quiche Lorraine is my low carb and Keto version of this classic French quiche that is also gluten free. And I think this is perfect to make during the holidays, and my crustless Quiche Lorraine recipe includes ingredients you may have on hand!

I think Cheesy crustless quiche Lorraine would be perfect when you want to have breakfast for a special occasion. My sister Val has a tradition of making quiche for Christmas morning, and this crustless quiche would definitely make a fun Christmas breakfast for carb-watching families!

I learned to love Quiche Lorraine while working part-time during college at a charming (and long-gone) French restaurant in Salt Lake City called Le Parisien. Perhaps you have eaten that famous and traditional French quiche with a flaky crust filled with custard containing bacon, onions and cheese. That is of course a tasty dish, but I like my crustless Quiche Lorraine just as much.

And in case anyone is wondering how this crustless quiche recipe differs from my usual low-carb breakfast casseroles, aside from the obvious use of a round bowl: it’s the step of mixing a generous amount of half-and-half into the eggs to create more of a custard consistency. And of course, much of the great flavor in this crustless quiche comes from the use of bacon, shredded Swiss cheese, mozzarella, and Parmesan for rich flavor. I hope you try it!

How to make a cheesy crustless quiche Lorraine:

  1. I used pre-cooked bacon with a lot of the fat already cooked out and then cooked it in the microwave and wiped off more fat before crumbling it.
  2. Place the crumbled bacon and sliced ​​green onions in a 9-10″ glass pie dish and top with the cheeses.
  3. Sprinkle with Spike herbs (affiliate link) or another spice mix that is tasty with eggs, black pepper and a little cayenne pepper (affiliate link).
  4. Beat the eggs and beat in half and half. (Use 6 eggs for a thinner, richer quiche, or use 8 eggs for a thicker quiche.)
  5. Pour the egg mixture over the remaining ingredients and stir gently.
  6. Bake in a preheated oven at 180 degrees Celsius for 45-50 minutes. It will swell as it cools, but it will collapse as it cools a little.
  7. Serve Cheesy Crustless Quiche Lorraine warm and enjoy, garnished with some diagonally sliced ​​green onion if you wish!

Ingredients

  • 8 slices bacon (see notes)

  • 1/2 cup sliced ​​green onions (preferably the white part)

  • 1 1/2 cups grated Swiss cheese

  • 1/2 cup grated mozzarella cheese

  • 1/4 cup coarsely grated Parmesan cheese

  • freshly ground black pepper to taste

  • 1/4 tsp. Spike Seasoning, see notes (or use another seasoning mix that goes well with eggs)

Instructions

  1. Preheat the oven to 350F/180C. Spray a 9-10 inch cake pan with nonstick cooking spray.
  2. Cook bacon using your preferred method until very crispy; then pat away as much fat as possible and crumble the bacon. (I used pre-cooked bacon from Costco, which I microwaved for 1 minute and then removed the fat.)
  3. Slice the green onions and grate cheese if necessary.
  4. Place the bacon, green onions, Swiss cheese, mozzarella, and Parmesan cheese in the pie pan. Season with ground pepper, Spike Seasoning and Cayenne Pepper.
  5. Beat the eggs until the yolks and whites are completely combined, then beat in half and half.
  6. Pour the egg mixture over the other ingredients; Then use a fork to gently stir so that all the ingredients are combined.
  7. Bake 45 minutes or until the center is set and the top is browned to your liking. The quiche will puff up as it cooks, but as it cools slightly it will settle into the thick custard-like consistency you see in these photos.
  8. Serve hot, garnished with green onions if desired.
  9. This crustless Quiche Lorraine will keep in the refrigerator for several days and can be reheated in the microwave.

Comments

I originally made this with six eggs for a thinner, richer quiche with a more custard-like texture, but now I prefer to use eight eggs. If you want less fat, you can use turkey bacon or chopped Canadian bacon for this recipe. Use heavy cream or milk instead of half-and-half if you prefer.

Spike herbs (affiliate link) is one of my favorite seasonings for eggs, but any mix that is good with eggs will work. I like a hint Cayenne pepper (affiliate link) in this, but it is absolutely optional.
