Brown Butter Crust No Bake Cheesecake

Prevent your screen from going dark

  • To make the crust, place the butter in a large saucepan and heat over high heat. Stir often. After about 3 minutes the butter will start to foam and brown spots will appear. Continue beating and once the butter is medium brown, remove the pan from the heat and stir in the allulose and milk powder. Let it cool slightly, but while it’s still liquid, pour it into a parchment-lined 9-by-11 baking pan (otherwise it will stick). Place in the refrigerator to set.

  • While the crust cools, make the filling. Place the cream cheese in a large bowl and stir well until there are no lumps. Add the sour cream, lemon juice and allulose powder and stir well.

  • Place 2 tablespoons of whipped cream in a small bowl and add the gelatin. Stir well to combine, then heat in 15-second increments until the gelatin has melted. Use a spatula to mix the gelatin mixture into the cream cheese mixture.

  • Place the rest of the cream in a large bowl and mix by hand until stiff peaks form. Stir the whipped cream into the cream cheese mixture. Add the salt and stir well. Taste and adjust the sweetness to your liking.

  • Pour the cream cheese filling onto the cooled crust. Place back in the refrigerator for 3-4 hours or until set.

  • Store extras in an airtight container in the refrigerator for up to 7 days.

“Good morning beautiful peeps! I wanted to do an “annual” check-in as encouragement for those starting out and to thank those who have been here on my journey.

I had tried every kind of “diet” for the past 30 years. Playing with variations of keto diets, but everyone had a different take on it and the weight seemed to creep back on.
