BBQ Braised Short Ribs – Maria Mind Body Health

Many of you know that I have been on a weight loss journey over the past few months and one of the recipes I made for dinner is BBQ Braised Short Ribs and they are so delicious, I wanted to share my recipe with you all!

When you enjoy braised short ribsyou don’t just get flavor; Beef short ribs are rich in nutrients and provide high-quality protein, healthy fats and a wide range of vitamins and minerals. The slow stewing process does not reduce much of the nutrition; in fact, the breakdown of collagen in gelatin adds intestinal and joint benefits.

BBQ Braised Short Ribs

Prevent your screen from going dark

  • Heat the oven to 275 degrees.

  • Heat the fat in a large Dutch oven over medium heat. Season the short ribs on all sides with 1 tablespoon of smoked salt and a teaspoon of pepper. Sear the short ribs until golden brown on all sides, about 2 minutes per side, working in batches if necessary.

  • Increase heat to medium and add garlic and onion, cooking for 5 minutes. Season with 1/2 teaspoon salt. Add tomato sauce and stir to coat. Continue cooking, stirring occasionally, until the tomato sauce begins to caramelize slightly at the bottom of the pot, about 2 minutes.

  • Add the stock and stevia glycerite. Using a wooden spoon, scrape up any browned or caramelized bits. Bring to the boil, cover and put in the oven.

  • Cook undisturbed until the short ribs are meltingly tender and falling off the bone, about 3½ to 4 hours.

  • Remove from the oven and serve.

“Good morning beautiful peeps! I wanted to do an “annual” check-in as an encouragement to those starting out and as a thank you to those who have been here on my journey.

I had tried every kind of “diet” for the past 30 years. Playing with variations of keto diets, but everyone had a different take on it and the weight seemed to creep back on.

Then I found Maria’s site. After reading the posts and files, I decided to do the 30 day cleanse. Just two weeks after the cleanse, I realized I hadn’t felt better in years. I was on a lifelong journey.

I lost 7 sizes in less than a year. Just before my 60th birthday, at 6 feet tall, I was a size 6. Never in my life did I think I could get anything lower than 10-12. I have maintained Maria and Craig’s healthy keto way and have entered another year at the same weight.

Are there ups and downs? Naturally. Occasionally I do 1-2 PSMF days. My friends say that I eat “strangely”, they are used to it and have no problem with me ordering certain things when we go out to eat. My doctor and blood work say “keep up the good work”! No more high blood pressure. No more pre-diabetic status.

I think my tip for this year is not to get ‘settled’. Keep trying recipes and creating new ones. Keep changing things up and enjoy your new way of eating. Love who you are right now and don’t get discouraged. Support this group/manager and don’t let setbacks hold you back. Enjoy the journey.
