Hi! How are you? I hope you have a wonderful week so far. It is a crazy week here with exercises, basketball and volleyball games, so I try to be as strategic as possible with meal planning and preparation.

One of my favorite things to use during busy weeks such as this: the good rotisserie -chicken!

(I know it is hot and covered with plastic, but what can you do? You can make your own chicken completely, but we are talking about fast hacks today!)

Back-to-school season always sneaks quickly and suddenly during the week dinners feel like a juggling act between homework, after-school activities and the usual crowds of going to sleep. It is funny because the summer felt so chilly and now that we are back at school … It feels like pure chaos.

One of my favorite secret weapons for fast, healthy dinners? A Rotisserie chicken purchased in the store. It is already cooked, soft and full of proteins, so it shortens the preparation time in two and keeps your meals healthy and satisfying.

Today I wanted to share some of my favorite back-to-school dinners with Rotisserie Chicken, plus a few fast recipe ideas that you can rotate.

Advantages of cooking with Rotisserie Kip

Time Saver: It is not necessary to roast or bake. Just shred and go!

Budget-friendly: one chicken often extends to 2-3 meals.

Protein-packed: helps you touch your protein goals with less preparation.

Approved by children: Mild taste makes it easy to mix in different dishes. The children hold a rotisserie chicken.

Versatile: works with soups, tacos, stews, wraps, salads and more.

Fast tips for using Rotisserie Kip

Shred while warm: it is easier to pull apart immediately after you have it at home.

Keep the bones: simmering with water, vegetables and herbs to make homemade broth for soups.

Save correctly: store fragmented chicken in an airtight container in the fridge for a maximum of 3 days or freeze in 1 cup of portions for later.

Add fresh herbs and herbs: clear flavors such as lemon, coriander, cumin or pepper can turn leftovers into a new dish.

Easy Rotisserie Kipdiners

Here are some of my go-to recipes and meal ideas that come together within 30 minutes or less.

1. Chicken and vegetarian rice

A quick stir -fry is a savior in need on weekly nights.

Ingredients:

2 cups of fragmented rotisserie chicken

3 cups of cooked rice (leftover or frozen works great)

2 cups of mixed frozen vegetables

2 eggs, slightly closed

2–3 tablespoons of coconut aminos or soy sauce with low sodium

1 tbsp olive oil or sesame oil

Instructions:

Heat oil in a large frying pan or wok.

Add vegetables and cook until it gets soft.

Push vegetables aside, scrape eggs in the same pan.

Stir in rice, chicken and coconut -aminos; Cook until heated.

Serve hot with a sprinkle green onions or sesame seeds. Sprinkle with Sriracha.

2. Rotisserie Chicken Enchiladas

This is always a favorite of the family and also freezing friendly.

3. BBQ chicken stuffed sweet potatoes

A fast, natural gluten -free dinner with just a few ingredients.

Ingredients:

4 medium -sized sweet potatoes, baked or in the microwave to soft

2 cups of fragmented rotisserie chicken

1/3 cup of BBQ sauce (search for brands with low sugar or clean ingredient)

Chopped green onions and/or chedder -cheese or feta for garnish

Instructions:

Mix chicken with bbq sauce in a bowl.

Split sweet potatoes and fluff the inside with a fork.

Stuff with BBQ chicken mixture and garnish with green onions and cheese.

4. Chicken tortilla soup

Perfect for cool evenings or when you need a meal with one pot.

Ingredients:

2 cups of fragmented rotisserie chicken

4 cups of chicken broth (homemade or store))

1 can be diced tomatoes

1 cup of black beans, flushed

One onion

3 clove of garlic, minced meat

1/2 teaspoon of cumin, 1 teaspoon chili powder, 1 teaspoon of oregano

Fresh coriander, lime wedges, cheese, tortilla strips for topping

Instructions:

Fry the garlic and onion for a few minutes in a little oil until soft. Add the remaining ingredients to a large pot and bring simmering for 20 minutes.

Adjust herbs to taste.

Serve hot with toppings.

5. Greek chicken pita wraps

A light, fresh dinner option that is easy to adjust.

Ingredients:

2 cups of fragmented rotisserie chicken

4 whole wheat or gluten -free pitas

1 cup of chopped cucumbers

1 cup of chopped tomatoes

1/4 cup of purple onion, minced meat

1/4 cup of chopped calamata olives

1/2 cup of tzatziki -sauce or hummus

Feta crumbled

Fresh mint for serving

Instructions:

Warm pitas short in the oven or microwave.

Low with chicken, cucumbers, tomatoes, onions, olives and tzatziki. Top with fresh mint.

Wrap and serve immediately.

Time-saving back-to-school dinner tips

Batch preparation on Sunday: shred 2 chickens, prepare vegetables and cook rice or quinoa. If you prefer homemade rotisserie -chicken, this is the time to do it! Pop it in the oven or on the Traegar.

Double recipes: Make enough for leftovers to use the next day for lunch.

Mix flavors: use different herb mixtures or sauces (such as Buffalo, Teriyaki or Pesto) to keep meals interesting.

Keep pantry staples handy: coconut aminos, salsa, canned beans, frozen vegetables and olive oil make meals faster weekdays.

With these back-to-school dinner hacks with Rotisserie Chicken, you can get a nutritious meal on the table in less time than is necessary to order. I am a big fan of a small planning, and a few shortcuts are going a long way to make it smoother during the week. It is also so much less expensive!
